1. Combine the eggs, spinach, salt, pepper, garlic flakes and oats
2. Heat a small amount of margarine in the pan and place the sliced tomato in the pan. Allow to cook for a few minutes.
3. Pour the egg mixture over the tomatoes.
4. Cover with the lid and allow it to cook for a few minutes. Then sprinkle with the grated cheese, cover and allow to cook for another few minutes until the egg is cooked.
5. Transfer to chopping board and sliced to desired size. Serve with a slice of Low GI toast for a perfectly balanced breakfast.
