Breakfast Omelette Pizza

Breakfast is the most important meal of the day, but who says breakfast needs to be boring?

Ingredients
  

  • 1-2 Tomatoes Sliced
  • 3 Eggs
  • 1/2 - 1 cup Chopped baby spinach
  • 2 tbsp Oats
  • Salt To taste
  • Pepper To taste
  • Garlic flakes Optional
  • Grated cheese

Instructions
 

  • 1. Combine the eggs, spinach, salt, pepper, garlic flakes and oats
  • 2. Heat a small amount of margarine in the pan and place the sliced tomato in the pan. Allow to cook for a few minutes.
  • 3. Pour the egg mixture over the tomatoes.
  • 4. Cover with the lid and allow it to cook for a few minutes. Then sprinkle with the grated cheese, cover and allow to cook for another few minutes until the egg is cooked.
  • 5. Transfer to chopping board and sliced to desired size. Serve with a slice of Low GI toast for a perfectly balanced breakfast.
