Spinach, chopped

Onion, finely chopped

Low fat cottage cheese

jar
Pasta sauce (any sauce that you prefer)
Cannelloni tubes
White sauce
Salt and pepper

Olive oil
Instructions
Preheat the oven to 180C
Fry the onion in the olive oil until soft
Add the chopped spinach to the pan and cover the pan allowing the spinach to wilt
Add the tub of cottage cheese and salt and pepper to taste
Transfer to food processor or blender with stick blender until smooth
Place a small amount of pasta sauce on the bottom of an oven proof dish
Fill the cannelloni tubes with the creamed spinach mixture and layer in the dish
Cover the tubes with the remaining pasta sauce
Cover with a some white sauce
Bake for 40 minutes at 180C
