Roast Butternut and Quinoa Salad

Ingredients
  

  • 1 medium butternut, chopped
  • 1/2 cup quinoa
  • 1/2 cup baby spinach, chopped
  • cucumber
  • feta
  • tomato

Instructions
 

  • Coat the butternut with 15ml olive oil
  • Roast the butternut for 20 minutes and allow to cool
  • Cook the Quinoa and allow to cool
  • Combine the salad ingredients
  • Dress with Lemon juice or a balsamic reduction or creamy tahini dressing
