Roast Butternut and Quinoa Salad

Ingredients

butternut, chopped
1/2
cup
quinoa
1/2
cup
baby spinach, chopped
cucumber
feta
tomato
Instructions
Coat the butternut with 15ml olive oil
Roast the butternut for 20 minutes and allow to cool
Cook the Quinoa and allow to cool
Combine the salad ingredients
Dress with Lemon juice or a balsamic reduction or creamy tahini dressing
