Mozzarella stuffed chicken breasts with sundried tomatoes

- 4-5 Chicken breasts
- 1 Red onion Chopped
- 30 ml Olive oil
- 6-8 Sundried tomatoes in olive oil I used Ina Paarmans
- 6-8 slices Mozzarella
- Salt
- Pepper
- Paprika
Season the chicken breasts with salt, pepper and paprika
Heat 15ml olive oil in the pan and brown the chicken breats on both sides
Remove from the pan and set aside
Heat the remaining 15ml olive oilnin the pan and brown the onions until soft
Butterfly the chicken breasts and stuff with the mozzarella
Return the chicken breats to the pan
Add the sundried tomatoes to the chicken
Cover and cook on a low heat for 20 minutes. It makes its own delicious sauce
