Vegetable Lasagna

Ingredients
  

  • 1 red onion, small chopped
  • 5 carrots peeled and chopped
  • 2 celery sticks, large chopped
  • 4 baby gem squash sliced
  • 1/4 head broccoli chopped
  • 1/4 head cauliflower chopped
  • 5 tomatoes chopped
  • 50 g tomato paste
  • 1 tsp dried Italian herbs
  • 1 tsp dried basil
  • 15 ml olive oil
  • salt and pepper
  • white sauce
  • lasagna sheets

Instructions
 

  • Add olive oil to a pot and cook the onions until soft
  • Add all the veggies, tomato paste, herbs and 1 cup water
  • Cover and cook for 20 - 30 minutes until veggies are soft
  • Add salt and pepper to taste
  • Blend veggies until smooth(ish)
  • Bring back to simmer to thicken if it's too runny
    Adjust salt and pepper to taste
  • Prepare white sauce
  • Layer Lasagna sheets, veggies and white sauce.
    Sprinkle with grated cheese
  • Bake at 180C for 30 minutes
