Ingredients

red onion, small

dried Italian herbs

dried basil

olive oil
salt and pepper
white sauce
lasagna sheets
Instructions
Add olive oil to a pot and cook the onions until soft
Add all the veggies, tomato paste, herbs and 1 cup water
Cover and cook for 20 - 30 minutes until veggies are soft
Add salt and pepper to taste
Blend veggies until smooth(ish)
Bring back to simmer to thicken if it's too runny
Adjust salt and pepper to taste
Prepare white sauce
Layer Lasagna sheets, veggies and white sauce.
Sprinkle with grated cheese
Bake at 180C for 30 minutes
