I love to make a vegetable lasagna, you can actually use any left over veggies that you have in the house. This is ideal for a meat free Monday 🙂

Vegetable Lasagna
Ingredients
- 1 red onion, small chopped
- 5 carrots peeled and chopped
- 2 celery sticks, large chopped
- 4 baby gem squash sliced
- 1/4 head broccoli chopped
- 1/4 head cauliflower chopped
- 5 tomatoes chopped
- 50 g tomato paste
- 1 tsp dried Italian herbs
- 1 tsp dried basil
- 15 ml olive oil
- salt and pepper
- white sauce
- lasagna sheets
Instructions
- Add olive oil to a pot and cook the onions until soft
- Add all the veggies, tomato paste, herbs and 1 cup water

- Cover and cook for 20 - 30 minutes until veggies are soft

- Add salt and pepper to taste
- Blend veggies until smooth(ish)

- Bring back to simmer to thicken if it's too runnyAdjust salt and pepper to taste
- Prepare white sauce
- Layer Lasagna sheets, veggies and white sauce. Sprinkle with grated cheese
- Bake at 180C for 30 minutes
