Spinach Cannelloni

Try something different. This spinach cannelloni is very simple to make.

Any pasta sauce can be used or even tinned chopped tomatoes can be sued instead of a pasta sauce

Fry a chopped onion and add the spinach, allow the spinach to wilt.
Once the cottage cheese is added and the spinach is blended it is ready to be added to the cannelloni tubes. this can be sone with a spoon, but it was much easier to do with a piping bag.
The cannelloni tubes are layered in an oven proof dish add any remaining spinach was used to cover the tubes.
Topped with the remaining pasta sauce and covered with white sauce before baking
Bake for 40 minutes

Spinach Cannelloni

Prep Time 15 minutes
Cook Time 40 minutes
Servings 4

Ingredients
  

  • 200 g Spinach, chopped
  • 1 Onion, finely chopped
  • 1 tub Low fat cottage cheese
  • 1 jar Pasta sauce (any sauce that you prefer)
  • Cannelloni tubes
  • White sauce
  • Salt and pepper
  • 10 ml Olive oil

Instructions
 

  • Preheat the oven to 180C
  • Fry the onion in the olive oil until soft
  • Add the chopped spinach to the pan and cover the pan allowing the spinach to wilt
  • Add the tub of cottage cheese and salt and pepper to taste
  • Transfer to food processor or blender with stick blender until smooth
  • Place a small amount of pasta sauce on the bottom of an oven proof dish
  • Fill the cannelloni tubes with the creamed spinach mixture and layer in the dish
  • Cover the tubes with the remaining pasta sauce
  • Cover with a some white sauce
  • Bake for 40 minutes at 180C
