
Roast Butternut and Quinoa Salad
Ingredients
- 1 medium butternut, chopped
- 1/2 cup quinoa
- 1/2 cup baby spinach, chopped
- cucumber
- feta
- tomato
Instructions
- Coat the butternut with 15ml olive oil
- Roast the butternut for 20 minutes and allow to cool
- Cook the Quinoa and allow to cool
- Combine the salad ingredients
- Dress with Lemon juice or a balsamic reduction or creamy tahini dressing
