
Butternut pasta
Creamy vegetarian pasta
Ingredients
- 1 Medium Butternut, chopped
- 2 Cloves Garlic
- 1 Tablespoon Olive oil
- 1 Tub Low fat cream cheese
- salt and pepper
- Pasta of your chioce
Instructions
- Place the butternut and garlic on the oven tray and coat with olive oil

- Bake for 20-30 minutes until soft
- Cook pasta (retain some of the pasta water)
- Transfer to blender or use a stick blender

- Add the cream cheese and salt and pepper

- Combine with pasta

- Add reserved pasta water to thin if need be

- Serve immediately
