Mozzarella stuffed chicken breasts with sundried tomatoes
True to our style, another simple and delicious recipe
Ingredients
- 4-5 Chicken breasts
- 1 Red onion Chopped
- 30 ml Olive oil
- 6-8 Sundried tomatoes in olive oil I used Ina Paarmans
- 6-8 slices Mozzarella
- Salt
- Pepper
- Paprika
Instructions
- Season the chicken breasts with salt, pepper and paprika
- Heat 15ml olive oil in the pan and brown the chicken breats on both sides
- Remove from the pan and set aside
- Heat the remaining 15ml olive oilnin the pan and brown the onions until soft
- Butterfly the chicken breasts and stuff with the mozzarella
- Return the chicken breats to the pan
- Add the sundried tomatoes to the chicken
- Cover and cook on a low heat for 20 minutes. It makes its own delicious sauce
